Bright, and zesty, the wine jumps out the glass, showing Meyer lemon, apple core and lime flower. Full of freshness and vitality, pear and a touch of saltbush emerge.
The freshness continues on the palate – granny smith and fresh cut lemon abound. Subtle phenolics and subtle yeasty complexity add volume, and the wine hums along, courtesy of a delicate, persistent bead. Finally, a chalky, appley finish provides definition and ample length to a sparkling that shows a fine balance of acidity, freshness and savouriness.
