Winemaker's Tasting Notes
As with all good sparkling wines there is a good ‘mousse’ in the glass. Bright and fragrant exhibiting grapefruit, Granny Smith apple, Nashi pear and custard apple. Also complex, there lies layers of nougat, brioche, lightly toasted hazelnuts and almond meal.
Elegant refinement follows a very tight and focused palate defined by immediate lemon flesh and subtle lime, which leads to a delicately textured mid palate. These components are offset, yet complimented by woven secondary characters of blanched almonds and hints of cinnamon. The finish emulates diligent symmetry, underpinned by a balanced and slightly saline acid spine.
